This is definitely one of the best potato recipes I’ve made for homemade mashed potatoes, as i have said before i LOVE garlic and it is full of garlic! The green onions give it a nice taste and color to this dish. I don’t even peel the potatoes because i love the texture of the creaminess with pieces of the peel in it. This side dish is a quick recipe to make if your in a rush, if you need a last minute side to complete your meal or if your feeling like having potatoes! Either way, i know you will love it! enjoy!
- 6 medium baking potatoes, peeled and coarsely chopped
- 8 tablespoons butter, at room temperature
- 1/2 cup sour cream, at room temperature
- 6 garlic cloves, minced
- 3 tablespoons whole milk, plus extra, at room temperature or warmed
- salt and pepper to taste
In a medium saucepan, cook the potatoes in salted water until tender, about 15 minutes. Drain the potatoes and return them to the saucepan.
Add the butter, sour cream and garlic. Mash the potatoes with a potato masher or the back of a fork (if you like a more creamy potatoes with no chunks then i would blend it with a hand mixer) until the ingredients are blended. Add the milk, 1 tablespoon at a time until the potatoes are the desired consistency. Taste and add salt and pepper, if needed.
