Step 1: Marinate the Chicken

Add sliced chicken breast to a dish.

Add dry sherry, light soy sauce, oyster sauce, sliced ginger, and cornstarch.

Mix evenly by hand. Let marinate for 1 hour.
Step 2: Make the Batter

In another bowl, beat the eggs.

Add flour, cornstarch, salt, and pepper. Mix until smooth โ no lumps!
Step 3: Coat the Chicken

Dip the marinated chicken pieces into the batter.

Let the excess drip off before frying.
Step 4: First Fry

Heat oil to around 160โ170ยฐC (320โ340ยฐF).

Add chicken pieces and fry until lightly golden. Remove and drain.
Step 5: Second Fry

Increase oil temp to 180ยฐC (355ยฐF).

Fry chicken again until golden brown and extra crispy. Drain excess oil.
