Cowboy Pasta Salad is a fun, filling twist on traditional pasta salad. It features seasoned ground beef, fresh veggies, tender pasta, and a punchy lime dressing that brings it all together. Great served warm or cold — and even better the next day!

Step 1: Cook the Pasta

Boil a big pot of water. Add pasta and cook until soft (about 8–10 minutes).

Drain and rinse the pasta under cold water. Let it cool.
Step 2: Brown the Beef

In a pan, heat olive oil. Add ground beef and cook on medium heat.

Add chili powder, garlic powder, salt, and pepper. Stir until beef is fully cooked (no pink).

Turn off the heat and let the beef cool a bit.
Step 3: Make the Dressing

In a small bowl, mix lime juice, olive oil, honey, cumin, salt, and pepper.

Stir it up until smooth.
Step 4: Combine Everything

In a big bowl, add pasta, cooked beef, tomatoes, corn, black beans, onion, and cilantro.

Pour the dressing on top.

Gently mix everything together. Taste and add more salt if needed.
Step 5: Chill and Serve

Put the salad in the fridge for 10 minutes so it gets nice and cool.
