Step 1: Sear the Beef

  2. Add beef cubes and sear on all sides until browned (about 6–8 minutes). Remove and set aside.

Step 2: Build the Base

  1. In the same pot, add onion and sauté for 3–4 minutes until translucent.
  2. Add garlic and tomato paste, cook for 1 minute more.
  3. Stir in all the spices: cumin, cinnamon, paprika, turmeric, salt, and pepper.

Step 3: Simmer the Stew

  1. Return the beef to the pot.
  2. Add apricots, dates, beef broth, and water. Stir well.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, stirring occasionally.

Step 4: Finish and Serve

  1. Stir in lemon juice and simmer uncovered for 5 more minutes to concentrate flavors.
  2. Taste and adjust seasoning if needed.
